This Mexican meatloaf is so easy and light on your wallet. I m using chorizo as half of the meat in place of whole ground beef, so it will lessen the cost of this dish. The whole ground beef is not so amazing for meatloaf so I used some chorizo in it to make this recipe incredible! It’s a new discovery in the world of cheesy meatloaf! Yummy!

Binders for Mexican Meatloaf

Traditionally, breadcrumbs are used as a meatloaf binder but as to make this recipe low-carb, we’ll use coconut flour or almond flour instead of breadcrumbs as they perfectly resemble to breadcrumbs and perfect binders for this cheese stuffed Mexican flour. But in this recipe you can also use breadcrumbs if you want!

How to make super cheese Mexican Meatloaf?

This Mexican meatloaf is stuffed with cheddar cheese which will give you an immense joy when you’ll cut this meatloaf! After pressing half of the Mexican meatloaf mixture into a pan add a chunk of mild cheddar cheese (I cut 6 ounces of cheese into chunks and place it in the meatloaf leaving about 1 inch on each side), then put remaining meatloaf mixture on the top and press it firmly.

Now place it a preheated oven for 45 minutes and let the cheese melt! Too cheesy!

Take it out of the oven and leave this stuffed cheese Mexican meatloaf for 10 minutes.

Then serve it with jarred salsa and mashed cauliflowers!

INGREDIENTS

  • 1 lb Ground beef (I used 80/20)
  • 1 lb Ground Chorizo
  • 1 Egg
  • 1/2 cup Coconut flour or 1 cup Almond flour
  • 1/4 Red onion, minced (optional)
  • 2 Garlic cloves, minced
  • 1/2 tablespoon Garlic powder
  • 1/2 tablespoon Onion powder
  • 1/2 tablespoon Smoked paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 6 oz Mild or sharp cheddar cheese block, cut into chunks
  • 1/2 cup Salsa

INSTRUCTIONS

  1. Pre-heat oven to 350F.
  1. Combine all ingredients together in a large bowl, except cheese and salsa.
  2. Add half of the meatloaf mixture to a loaf pan and press into the bottom (you can form the mixture into a loaf shape on a sheet pan if you don’t have a big loaf pan)
  3. Place the cheese into the center of the loaf pan, leaving about an inch on all sides.
  4. Add the rest of the meatloaf to the pan and press it down to squeeze it a little.
  5. Bake in the oven for 45 minutes or until an internal temperature reaches to 165F.
  6. Take it out of the oven and let sit for 10 minutes.
  7.  Serve with salsa.

USEFUL TIPS

  1. Alternate of chorizo: If you don’t want to use chorizo, you can use more ground beef or ground pork instead.
  2. Type of cheddar cheese: You can use mild cheddar, sharp cheddar, or medium cheddar, whichever you prefer.
  3. Tender meatloaf: Don’t over work the meatloaf mixture or your meatloaf will be dense.  
  4. Alternate of loaf pan: Using a loaf pan helps the meatloaf keep its shape. You can form the mixture into a loaf shape on a foiled lined sheet pan if you don’t have a big loaf pan.
