Usually these clafoutis are made with cherries, but as to lower the carbs, here we’ll use strawberries as a substitute of cherries.

How to Make Gluten Free Low-Carb Strawberry Clafoutis

Take 1 pound of medium-sized fresh strawberries and remove the green tops and slice them in half.

Preheat the oven to 350F and spray an oval baking dish (or a cast iron skillet) with cooking spray.

Now mix the heavy cream, sweetener, almond flour, eggs, vanilla extract and salt in a blender and blend until smooth. You can whisk the whole batter too with a whisk but make sure that it will get perfectly smooth.

Then pour the whole batter into a pan and top it with strawberries (cut side up). Try to avoid sinking of strawberries fully in the batter (you can use big strawberries too).

Bake it in the oven for 30-40 minutes or until set (Keep an eye on it in the oven and make sure you pop any bubbles that form throughout the baking procedure).

Check with a knife or tooth pick if it comes clean then its all done.

Serve warm with sweetened whipped cream and enjoy the deliciousness of this delightful dessert!

  • 1 Cup Almond Flour
  • 2/3 Cup Granulated sweetener
  • 1 Tablespoon Vanilla Extract
  • 1/2 teaspoon kosher salt
  • 6 Large eggs
  • 1 Cup Heavy cream
  • 1 pound Strawberries (removed green tops and sliced in half)

INSTRUCTIONS

  1. Preheat the oven to 350F and spray a cast iron skillet or an oval baking dish with cooking spray.

  2. Pour the mixture into the skillet or baking dish and top with the strawberries, cut side up. Don’t let them sink completely into the batter.
  3. Bake in the oven for 35 to 40 minutes or until set.
  4. Be sure to pop any bubbles that form during the baking procedure.
  5. A knife or toothpick poked into the center should come out clean.
  6. Serve warm with sweetened whipped cream!
