In this chicken salad recipe, there is a flavorful blend of Greek yogurt and mayonnaise. Greek yogurt has same quantity of carbs as in sour cream but its low in calories. To cut some more calories, I used Greek yogurt instead of using straight mayonnaise.

In this low-carb chicken salad recipe, you can use any type of chicken you want. I recommend roasting 3 chicken breasts in the oven, but you can also use skewed chicken as well.

If you are roasting the chicken, then roast it on a sheet pan at 400F until the internal temperature reaches to 165F.

INGREDIENTS

  • 3 slices (cooked and crumbled) Bacon
  • 3 Cups (diced and cooked) Chicken Breast
  • 1/3 Cup Mayonnaise
  • 1/4 Cup 2% Greek Yogurt
  • 1/3 Cup (diced) Celery
  • 2 Tablespoons Lemon juice
  • 2 teaspoons Dijon Mustard
  • 1 (deiced) Avocado
  • Romaine lettuce leaves

INSTRUCTIONS

  1. Mix cooked chicken, mayonnaise, Greek yogurt, chopped celery, lemon juice and Dijon Mustard, in a large mixing bowl, and then season with salt and pepper as per taste.
  1. Now, place romaine lettuce leaves on a serving dish and put the chicken salad on each leaf, distribute equally.
  2. Garnish with cooked diced bacon and avocado.
  3. Serve.
